Parmesan is a DOP hard cheese from the Grana family, produced with raw cow's milk, partially skimmed by surfacing, without the addition of additives.
The production area includes the provinces of Reggio Emilia, Modena, Parma and Bologna to the left of the Reno River and Mantva to the right of the Po.
The most delicate maturation: already at 12 months Parmigiano Reggiano is naturally lactose-free and has hints of milk, yogurt and vegetal notes.
